Job Title: Bakery Chef-cum-Production Manager Company: Calcutta Bakery Pvt. Ltd. Location: Kolkata Job Type: Full-time About the Role: We are looking for a skilled and experienced Bakery Chef-cum-Production Manager who will independently handle day-to-day production of bread, cakes, pastries, cookies, muffins, and other bakery items. The candidate must have strong technical expertise in baking as well as managerial ability to oversee staff, maintain quality standards, and ensure smooth production operations. --- Key Responsibilities: Production Management Plan, supervise, and execute daily production of bread, cakes, pastries, biscuits, muffins, rusks, and more. Manage production schedules to ensure timely supply for outlets and orders. Maintain consistency in taste, texture, and product quality across all batches. Monitor dough preparation, fermentation, baking, cooling, slicing, and packaging processes. Innovate and develop new bakery products as per market trends. Team & Operations Management Supervise bakery staff and assign daily tasks. Train and guide junior chefs, helpers, and production staff. Ensure discipline, hygiene, and safety inside the production area. Troubleshoot production issues and machinery-related concerns. Inventory & Cost Control Manage stock of raw materials (flour, yeast, cream, flavours, packaging, etc.). Ensure optimum utilization of materials to control wastage. Coordinate with procurement for timely purchasing. Maintain daily production and consumption records. Quality & Compliance Ensure all bakery products meet company quality standards. Maintain food safety, FSSAI compliance, and hygiene protocols. Monitor equipment maintenance and coordinate repairs when necessary. --- Required Experience & Skills Minimum 4-8 years of experience in bakery production (bread, cakes, pastries). Strong technical knowledge of commercial baking processes. Experience in managing a team in a bakery/food manufacturing setup. Ability to work under pressure and handle multi-product production. Knowledge of temperature control, proofing, icing, decorating, and finishing. Basic understanding of production reports and wastage management. --- Educational Qualification Diploma/Certificate in Bakery & Confectionery (preferred). Candidates with strong hands-on experience may also apply.

Job Types: Full-time, Permanent

Pay: ?15,000.00 - ?35,000.00 per month
